Our story
Oven Head Salmon Smokers is a family smokehouse in Bethel, New Brunswick, known for carefully prepared smoked Atlantic salmon near the shores of Passamaquoddy Bay.
Oven Head Salmon Smokers grew out of a simple idea: take good Atlantic salmon, handle it carefully, and smoke it slowly enough for the flavour and texture to speak for themselves.
Published stories about the smokehouse trace the business back to Debbie and Joe Thorne, who began experimenting with cold-smoked salmon after Debbie's brother, Laurie Pendleton, was raising farmed salmon and bringing fish to the family. Joe and Laurie worked on the smoking process, shared samples with local chefs, and adjusted the method until the response was clear: leave it the way it is.
That patient start became a family business with a loyal following. The smokehouse has long been known for cold-smoked salmon, jerky, tail pieces, gift products, and a hands-on approach that favours quality over getting too big.
The smoking process
Cold smoking is different from hot smoking. The fish is cured and smoked gently at a lower temperature, creating a silky texture that can be sliced thin for serving.
Older features on Oven Head describe a process built around fresh salmon, a salt brine, drying time, and long smoking sessions with maple chips. After smoking, the salmon is chilled, handled carefully, and prepared for serving, gifting, pickup, or shipping within Canada by confirmation.
